There are many key factors to baking a cake that is both moist and tastes great.

This can be achieved either by baking from scratch or by using a store-bought cake mix.

No matter which recipe you start out with, there are a few tips and tricks you can follow that will ensure you end up with a terrific moist cake every time!

#1) Follow your recipe or cake mix directions. If your measurements are off, so too will be your cake. If the ratio of liquid to dry indredients is altered, you will end up with either a soggy or dry cake.

Watch the amount of milk or water. Unless otherwise stated, it isn't a good idea to substitute one for the other in your recipe.

#2) Baking time is another key factor in the moistness of a cake, but it's not always so easy to judge.

The recipe may say 350 degrees but your oven thermostat may be set either slightly above or below the desired temperature.

The baking time needs to be adjusted accordingly.

Watch your cake closely and keep tabs on it often to rescue it early if need be. You can always bake it longer, but once a cake is overdone, you're out of luck.

I repeat .... once a cake is overdone, there just isn't much you can do about it.

So check on your cake often!

(Through the oven door with the oven-light on, of course. If you open the door, you risk disturbing the over-all temperature and having your cake collapse from the stress.)

"A lot of learning for a VERY small price. Less expensive and bothersom than booking a class, getting in the car, driving for hours. This way you can learn when the timing is right for you-- even if it's 3 a.m.!"

#3) Check the freshness of your cake mix. Cake mixes have a certain shelf-life and if used past their expiration date, your finished cake will be off-tasting.

Always buy the freshest cake mix possible and then follow the directions carefully.

#4) Experiment with adding applesauce or pudding to your cake recipes. Both ofthese additions work great for holding in moisture.

Just be careful not to overdo it or you'll end up with a "pudding cake," as I once discovered early on in my baking career!

Pay close attention to the details explained here and you will bake yourself a perfectly moist cake everytime!

Good luck and Good Baking!
