CASE STUDY #2:
Juanita Owen, Huntsville, AL

"Hi Sam, I just wanted to say I am so glad I found your website. I wish I had found it a lot earlier. I am a wanna-be cake decorator, have had part 1 and part 2 of the Wilton classes, but have learned so much more just by your few emails. Thanks for sharing your knowledge and expertise so my cakes can get a little better. I have attached a cake I did for my Mother and Father in-laws 50th wedding anniversary. Anyway, I learned a lot for the next big cake I do. Again, thanks for the real help." Juanita Owen, Huntsville, AL

CASE STUDY #3:
Kathe Sadler, Placerville, CA

"Hi Sam, I've thoroughly enjoyed receiving your cake tips via email. They helped me with my first attempt at a wedding cake. And since this was my first, the lucky couple only had to pay for supplies. I learned a lot from your tips though and wanted to say, thanks. You taught me how to prevent the frosting from cracking (bride wanted butter cream frosting), how to prevent the separator plates from sticking, and lots more. Attached is a photo. I think it turned out okay, nothing great, just okay. Thanks again!" Kathe Sadler, Placerville CA
(Editor's note: "...just okay"??? It's BEAUTIFUL!)

CASE STUDY #4:
Olga Yevich, Shelton, CT

"Hi Everyone! I just wanted to send a picture of my second cake that I baked. After the first cake, I made sure that I followed directions to a T. I made this cake for my
in-laws 40th wedding anniversery. Everyone loved it! I showed pictures of this cake to my sister...she asked me if this was a cake that I was going to make. When I told her that I made it already, her mouth just dropped. The cake is a 4-layer butter cake with buttercream frosting and fondant. Thank you,"
Olga Yevich, Shelton, CT - retired EMT

CASE STUDY #5:
Amanda A. Touchett, Lafayette, LA

"Here is one of my latest and it is appropriate that you mentioned mixing your colors because I had to do that with both my buttercream and my fondant and the shades needed to match even after the buttercream hardened (and as you know, darkened!)
Hope you like it Ð it was fun to make! Thanks!"
Amanda A. Touchett

CASE STUDY #6:
Chef Terri O, Phoenix, AZ

"Sam, Thanks for your tips and techniques. As you can see I have been working very hard and using your daily tips, I espically enjoyed the glazing tip. Thank you both!"
Chef Terri O

CASE STUDY #7:
Anneke Jansen, Tucson, AZ

"Hi Michael, Thanks to you I found a new hobby, making cakes. I never made a cake in my life, but I like to play with clay, and one day, a friend ask me to make her a wedding cake for her very small wedding, and because they are friends, and they will forgive me if the cake turned out not so great, I promised her I will give it a try.

So the first thing I did was go to the internet, and I found you, ordered the book, did what you told me, and this is the result, not too bad, but I did made a big mistake, I just used the butter flavor shortening, that is the reason the cake is .... well, say...... so yellow.... But for the rest, I think it tasted and look ok.

And now I am making cakes all the time. And because I am still learning how to do it, I only charge people for the material. The wedding cake you see cost me only 15 dollars. I can not do it without your help, thank you!" Anneke

CASE STUDY #8:
Norma Buccianti, Orlando, FL

"Dear Sam, Thank you for the delicious Red Velvet Cake recipe. My husband took a picture and I think that it looks beautiful.

My family and friends really loved my Red Velvet Cake. I just followed your recipe and added a special touch brushing the layers with a little rum mixed with simple syrup. It was then frosted and finished with some fresh berries. Delicious!
Thanks again," Norma Buccianti

CASE STUDY #9:
Mercedes Sorbara, La Grange, IL

"Hi Sam, This particular cake (sheet and two hearts), are 3 layers, filled with chocolate mousse and cream cheese, covered with rolled fondant, quilted with a silicone impression mat and decorated with edible pearls, (some hand made). The flowers are made in gum paste. The theme of the Shower was "tulips and roses".
The future bride was crying!! when she saw the cake. They even invited me to the shower. It was a hit!

I really enjoy the "tips". No matter how experienced you are in the field, there is always something to learn. Thanks," Mercedes

(Editor's note: Mercedes' is a highly-skilled professional.
Notice the detail in her Gum Paste flowers below!)
